Chicken Enchiladas

Note to readers: I don't always post every single dinner we have, I promise. Usually I get on a kick and make a bunch of meals in one week and post as many of them as I can remember to take pictures of - this is that kind of week.

I do "Last Night's Dinner" for 2 reasons: 1. to let you guys know some of the recipes we've tried and enjoyed, and 2. as a reminder to myself of things I would do differently so I don't forget next time. Case & point below.... :)

Last night we had some yummmmmy enchiladas! I found this recipe on Tasty Kitchen and tried it out.


To go with it, we made "Creamy Four Cheese" Rice a Roni.

Things to do differently next time:
*don't use the whole bottle of green sauce (way too spicy for me!)
*maybe use smaller tortillas so we can have 10 little ones instead of 5 big ones
*add black beans or shredded zucchini inside the enchiladas
You should try this too! It was unbelievably easy and you could add a lot of other stuff inside depending on your taste. :) Two thumbs up!

  1. You should have a Raman Noodle dinner and post pictures of all the preparation! (opening the package, boiling the water, dumping the noodles in the water, waiting 4 minutes, draining the water). The possibilities are endless!
